The Champagne region is located about 160km northeast of Paris. Split into five wine producing areas : Aube, Côte des Blancs, Côte de Sézanne, Montagne de Reims, and Vallée de la Marne, the towns of Reims and Épernay act as the commercial centers of the region. While Champagne might be misused as a generic term for sparkling wine, it’s reserve exclusively for sparkling wines produced in the Champagne region under the rules of the appellation. Champagne wine production uses three major grapes: Pinot Noir, Chardonnay and Pinot Meunier. Champagne wines made exclusively from Pinot Noir and Chardonnay are known as Blanc de Noir and Blanc de Blanc, respectively. For the great majority Champagne is made of a blend of grape varieties. Non-vintage Champagne are ready to drink while vintage Champagne can be further kept in cellar to acquire complex aromas. Big houses have dominated the market but an increasing number of independent Champagne grower are producing terroir-focused cuvées offering a broader range of taste.
